Xmas cards are done! Addressed, stamped, sealed, put out for the mail. Hopefully they reach y'all safe and sound.
Now then, for those who asked,
Brownie Cheesecake Bars
(From Christmas is Cookies)
1 cup flour
1/3 cup cocoa powder
1 teaspoon baking powder
4 tablespoons buter, at room temperature
2/3 cup sugar
3 eggs
1/4 cup milk
One 8 oz package cream cheese, at room temperature
1/3 cup sour cream
1/2 teaspoon vanilla extract
2/3 cup sliced almonds
Preheat the oven to 350 F. Grease and flour an 8 inch square baking pan.
In a small bowl, stir together the flour, cocoa, and baking powder
In a large bowl, cream the butter with 1/3 cup of the sugar. Beat in 2 of the eggs, 1 at a time, beating well after each addition. Alternating between the 2, gradually add the flour mixture and the milk, beating well after each addition.
Spread the batter evenly in the prepared pan. Rap the pan once or twice on the counter to remove any air pockets. Bake for 10 minutes, or until just set.
Meanwhile, in a medium bowl, beat the cream cheese and the remaining sugar until smooth. Beat in the remaining egg, the sour cream, and the vanilla.
Pour the cream cheese mixture evenly over the brownie layer, spreading it with a rubber spatula. Sprinkle the almonds evenly over the cream cheese layer and bake for another 20 to 25 minutes, or until the cream cheese layer is set.
Let cool completely in the pan on a rack, then cut into 15 bars.
