Asian Chicken Noodle Soup
Mar. 8th, 2008 06:39 pmDinner has been eaten and was quite yummy. I was asked for the recipe so here it is:
2 cups sliced mushrooms (such as shiitake or button)
1 lb boneless skinless chicken breast, cut into 1 inch pieces
1 medium onion, cut into thin slices
2 cloves garlic, minced
2 large carriots, cut on the bias
2 14oz cans of chicken broth
2 Tablespoons soy sauce
1 teaspoon powdered ginger (the recipe called for 2 teaspoons grated fresh but I didn't have it handy)
3 cups sliced swiss chard or spinach (I used spinach)
8 oz Odon noodles
Combine all ingredients except noodles and chard/spinach in a 3-5 quart crockpot. Cook on low for 8-10 hours or high for 4-5. Once that time has passed stir in the chard/spinach, cover, and cook for 5 minutes.
Prepare noodles according to package directions.
To serve, put noodles into bowls and cover with soup. Can add cilantro or chili oil if desired. Serves 6.
It was good. I liked how the spinach at the end added a vibrant color and freshness, both of which tend to be missing in crockpot cooking. About my only feeling is that I would've liked the broth to have a little more oomph, but I adore really strong broths. So next time I try it I may tinker with it to add a stronger level of flavor. But really it is good as-is.
