Tweaks that I made: I used 8 oz pancetta and 4 oz honey baked ham instead of the sausage. I deliberately picked a sweet ham to help counteract some of the saltiness of the pancetta. I diced them both up and put them on like that. The pancetta might be a touch too strong, so next time I make it I'll try just 4 oz instead of 8 and see how that goes. (Which would mean 8 oz of meat in total instead of the original 1 pound. The bonus of something like pancetta is that you don't need a lot to get an impact.) I used 2 cups of cheese since you can never go wrong with more cheese, and I did half shredded mozzerella and half shredded cheddar. It's possible you could stay with the original single cup but... why? MELTED CHEESE. THERE IS NO WRONG.
I also tossed some dry Italian herbs into the egg mixture just to add flavor. I used a loaf of day-old French bread which I bought as day-old bread and actually used the next day. So by the time I got to it you could hammer nails with the thing. It came out perfect in the mix.
I did the 30 min covered and then uncovered it and left it in the oven with the heat off while I brewed a pot of tea just to help the cheese melt more and brown a little.
SO GOOD OMG. Excellent brunch food, very easy to make. I flung it into the oven and took a shower while it cooked so it's an awesome meal for when you've got things to do. Depending on the vibe of your brunch you'll definitely want to serve it with some fresh fruit or a salad on the side just to make sure your body doesn't completely abandon you for a more suitable owner. I had some clementines with it and it was just fine. I think any fresh fruit would pair wonderfully, and if you're going for a salad you'll just want a vinagrette of some kind instead of any dressing that's creamy.
In future I might try putting some spinach into the mix as well. And/or tomatoes. Which I would've tried this time but it's not tomato season so it'd just be a waste.
